It is printed on breakfast cereals, biscuits, snacks, beverages, cooking oils, ready-to-eat meals, dairy products, protein bars and even traditional foods that have been repackaged for a younger generation. Open a quick-commerce app and the vocabulary becomes even more extensive: high protein, low sugar, no added sugar, natural, organic, whole grain, millet-based, preservative-free, clean label, immunity, gut health and plant-based.

A large and growing commercial opportunity exists around better eating. But food marketers need to ask a more fundamental question: when a brand says “healthy”, what exactly does the consumer hear? The answer is rarely as straightforward as marketers assume. The word has become an umbrella for nutrition, wellness, convenience, aspiration, tradition, fitness and even identity. That makes it powerful as a marketing device, but also increasingly vague.

The Problem with One Word: “Healthy”

For one consumer, healthy may mean low sugar. For another, it may mean high protein. A parent may associate health with nutrition and familiar ingredients, while a fitness enthusiast may focus on protein, calories and macronutrients. An older consumer may look for food that is easier to digest or lower in salt, while a young professional may simply want something that feels less processed.

Even the same consumer can change their definition depending on the occasion. A person buying a snack for themselves may prioritise calories and convenience, while choosing food for their children may make them focus on ingredients and nutritional value. When shopping for ageing parents, the same person may suddenly become more concerned about digestion, sugar or salt.

This creates a fundamental challenge for marketers. “Healthy” is not a single consumer need. It is a collection of needs that happen to share the same word.

Food marketing has traditionally solved this complexity through shorthand. “Fresh” sounds better than processed. “Natural” suggests purity. “Whole grain” implies wholesomeness. “Organic” creates associations with responsible production. “High protein” suggests strength and fitness. “No added sugar” signals a more conscious choice.

These terms can communicate legitimate product attributes, but they can also lead consumers to assume the entire product is healthy based on one prominent feature.

When One Claim Creates a Health Halo

Consider a biscuit positioned around oats, a snack carrying a large “high protein” claim or a beverage featuring a functional ingredient prominently on the front of the pack. The consumer may notice the positive attribute and unconsciously extend that perception to the product as a whole.

Packaging amplifies this effect. Earthy colours, photographs of grains and nuts, words such as “wholesome” and “natural”, and images of active lifestyles can collectively create a visual shorthand for health. None of these elements is necessarily misleading. Together, they can shape how consumers perceive the product before they examine its detailed nutritional information.

This is particularly important in categories where consumers make rapid decisions. At a supermarket shelf or on a quick-commerce screen, the consumer may have only seconds to choose. The front of the package therefore does more than identify the brand; it establishes the product’s initial mental model.

For marketers, the implication matters: the claim a brand makes and the conclusion a consumer draws from that claim are not always the same.

India Does Not Have One Definition of Healthy

India makes this challenge more complex because there is no single Indian food culture. Many of them exist, shaped by geography, income, age, family structure, tradition, and lifestyle.

Breakfast might mean idli and sambar in one home, poha in another, paratha in another and a protein smoothie in a fourth. A consumer in Bengaluru may have a completely different weekday routine from someone in Jaipur, Kochi or Lucknow. Urbanisation and nuclear households have created new eating patterns, while traditional foods remain deeply embedded in family life.

This creates an interesting tension for food brands. Modern wellness marketing often presents health as something new: a better ingredient, a new formulation, a functional food or a contemporary nutritional solution. But many Indian consumers already have a strong relationship with foods that have been part of their diets for generations.

The opportunity is therefore not necessarily to replace traditional food with “healthy food”. It can be to reinterpret familiar food through contemporary needs.

The Millet Lesson

Millets are a good example. Ragi, jowar, bajra and other millets were never unknown to India. They were part of everyday diets across several regions long before “superfood” became a marketing term.

What has changed is their positioning.

Millets now appear in breakfast cereals, cookies, snack bars, flour blends, ready-to-cook products and contemporary packaged foods. Their meaning has expanded from traditional staple to modern wellness ingredient.

The same ingredient can now communicate several different ideas:

Tradition and regional heritage

Better everyday nutrition

Sustainability

A return to familiar ingredients

Modern wellness

An alternative to conventional grains

This illustrates an important principle in food marketing: ingredients acquire meaning from culture and context. A brand selling millet-based food is therefore not merely selling millet. It is deciding what millet should mean to the target consumer.

The Health Halo Goes Beyond Ingredients

The problem becomes more complicated when ingredient stories, packaging aesthetics and health claims reinforce one another. A product may contain a recognisable ingredient, use natural-looking packaging and carry a positive nutritional claim. The consumer can then form a broad perception of health without evaluating the product’s complete nutritional composition.

This is particularly visible in the growing market for “natural”, “clean” and “traditional” foods. Indian consumers are increasingly interested in foods that appear closer to nature and less industrially processed. But the visual language of naturalness is not itself a nutritional assessment.

A product can contain natural ingredients and still be calorie-dense. A product made with traditional ingredients can still contain significant amounts of sugar, salt or fat. A product with an attractive ingredient story is not automatically superior across every nutritional dimension.

This distinction matters because food brands increasingly compete through storytelling. The story can be about an ingredient, a farming method, a regional origin, a traditional recipe or a particular nutritional philosophy. These stories can create differentiation, but they should not replace clarity about what the consumer is actually buying.

This is especially relevant for emerging wellness brands. Founders often know every detail of their formulation and can explain why they chose one ingredient over another. Consumers, however, do not experience the product through the formulation sheet. They experience it through the package, price, taste, convenience and the role it plays in their daily routine.

The “Free From” Era

Another major development in food marketing is the rise of “free from” positioning. Walk through a premium food aisle and the claims can include:

No added sugar

Gluten free

Preservative free

Artificial-colour free

Trans-fat free

Refined-sugar free

Dairy free

Palm-oil free

For particular consumers, these claims can be highly relevant. The issue arises when the absence of one ingredient becomes shorthand for the product’s overall quality.

“No added sugar” answers a specific question about added sugar. It does not, by itself, describe every aspect of a product’s nutritional profile. “Gluten free” is essential for consumers with particular dietary requirements, but it means something different for someone who does not need to avoid gluten. Similarly, “preservative free” may appeal to consumers seeking particular formulations, but it does not describe a food’s overall nutritional quality.

The marketing lesson is not that these claims are unimportant. It is that one claim should not have to carry the entire product proposition.

A stronger brand makes the relevant benefit clear while giving consumers enough context to understand what that benefit does-and does not-mean.

The Consumer Has Started Checking

The relationship between food brands and consumers is also changing because information is increasingly available at the point of purchase. A consumer can search an unfamiliar ingredient, compare nutritional panels, read reviews, look at alternative products and investigate a claim within seconds.

Quick commerce has accelerated this behaviour. A consumer searching for “protein snack” can encounter dozens of alternatives, compare prices and quantities, examine claims and make a purchase without ever entering a physical store.

The result is a more questioning consumer.

A large “high protein” claim can lead to:

How much?

A “no added sugar” claim can lead to:

What is providing the sweetness?

A “multigrain” claim can lead to:

Which grains, and in what proportion?

A “natural” claim can lead to:

What exactly does natural mean in this product?

This does not mean every consumer is conducting a scientific analysis before buying a packet of biscuits. It means that brand communication is increasingly being evaluated rather than simply absorbed.

For marketers, that changes packaging’s role. Protein was once strongly associated with bodybuilding, athletes and specialist fitness consumers. It has now entered mainstream food marketing, appearing in breakfast products, snacks, beverages, desserts and familiar Indian formats.

But protein doesn’t mean the same thing to everyone.

For a fitness consumer, it may mean muscle development and recovery. For a working professional, it may represent convenient nutrition and satiety. For a parent, it may mean improving the nutritional quality of a child’s diet. For an older consumer, it can represent strength and everyday nourishment.

This creates an important opportunity for brands. Instead of simply adding a fashionable nutrient to a product and putting it prominently on the package, marketers should understand the underlying consumer problem.

Consumers generally do not wake up thinking about ingredients. They think about situations:

“I need a better breakfast.”

“I am hungry between meals.”

“I need something convenient after exercise.”

“I want something more filling.”

“I want my child to eat something nutritious.”

“I need a convenient option for my busy day.”

The nutritional ingredient becomes valuable because it addresses one of these situations.

Healthy Still Has to Taste Good

One part of the food equation no amount of nutritional positioning can eliminate: taste.

Consumers may be more health-conscious, but they still want food to be enjoyable. Taste, texture, aroma, convenience, price and familiarity remain central to food choice. A product can be nutritionally well designed and still fail to generate repeat purchase if consumers do not enjoy eating it.

This matters even more in India because food is closely connected with family, culture and emotion. Changing eating behaviour is not simply a nutritional exercise. A healthier breakfast product competes not just against another packaged product but potentially against the familiarity of dosa, idli, poha, upma, or paratha.

The strongest wellness products therefore have to fit into existing behaviour rather than simply lecture consumers about changing it. Health becomes commercially powerful when it can coexist with pleasure and convenience.

This is why the first purchase and the second purchase are fundamentally different marketing challenges. The first can be triggered by curiosity, advertising or a health claim. The second depends on whether the product delivered a satisfying experience.

Stop Selling What Consumers “Should” Want

Many wellness businesses begin with a genuine product insight. Perhaps the founder believes consumers consume too much sugar, not enough protein, or too many highly processed foods. The company develops a product intended to address the problem and assumes the market will recognise its value.

Sometimes it does.

Sometimes it does not.

The difference often lies in whether the brand has started with the consumer’s life or the product’s formulation. A founder may think, “People should eat this because it is healthier.” The consumer may ask, “Why should I choose this instead of what I already buy?”

That question forces the brand to consider the entire consumption experience.

The product may need to offer:

A meaningful nutritional benefit

Good taste

Convenience

An acceptable price

Familiarity or cultural relevance

Trust and transparency

A clear consumption occasion

A reason to purchase again

Health may be the entry point, but it is rarely the entire relationship.

What Food Marketers Should Do Differently

The implications for Indian food marketers are becoming increasingly clear.

1. Define the health problem precisely.
Instead of calling a product “healthy”, identify the specific need it addresses. Is it higher protein, lower sugar, greater convenience, digestive support, portion control or something else?

2. Understand the consumption occasion.
The same product can mean different things at breakfast, as a snack, after exercise or when feeding children. Context should influence positioning.

3. Make the benefit understandable.
Consumers should not have to decode a complicated nutritional proposition. Use specific, meaningful information rather than vague wellness language.

4. Treat ingredients as evidence, not the entire story.
Millet, oats, seeds, probiotics or protein can be valuable, but consumers ultimately need to understand why those ingredients matter.

5. Use “free from” claims carefully.
Removing something can be an important benefit, but it should not replace explaining the product’s broader proposition.

6. Design for repeat purchase.
Ask what will make the consumer buy the product again after the novelty of the health claim has disappeared.

7. Respect Indian food culture.
The opportunity is not always to make consumers abandon familiar foods. Often it is to make better nutrition compatible with familiar habits.

The Bigger Opportunity

India’s food market is entering an unusually interesting phase. Traditional ingredients are being rediscovered through modern formats. Protein has moved beyond the gym. Wellness is becoming part of everyday consumption. Quick commerce has changed how people discover and compare products. Consumers have more information than ever before, while brands have more ways to communicate with them.

But this does not mean consumers have stopped being emotional, habitual or pleasure-driven.

They still want food that tastes good. They still respond to familiarity. They still consider price. They still make choices based on convenience. And they still want to trust the brands that feed their families.

That is why the next phase of food marketing should move beyond the race to attach more health claims to more products. The opportunity is to make health meaningful in the context of an actual consumer and an actual consumption occasion.

The question is no longer simply, “Is this product healthy?”

The more useful marketing question is:

“Healthy for whom, for what need, in what situation-and why should that person believe us?”

That is a much harder question to answer, but it is also a much more valuable one.

Because the future of Indian food marketing will not be built simply by putting another health claim on the front of a package. It will be built by understanding what consumers are trying to achieve, creating products that genuinely help them do it, and communicating the benefit with enough clarity that the promise survives beyond the first purchase.

The smartest brands will not merely tell consumers what they should eat.

They will understand why consumers choose what they eat-and build healthier choices around that reality.

Healthy food marketing in India is changing rapidly.
